I don’t think knives can multi hit, even with multi hit enabled. I could be wrong about that, though. But you are right, multi hit only really makes sense with a big, two-handed weapon, and even that is questionable. Personally I set multi-hit on until I got used to the combat, but now I keep it off. Most logical weapons can still mutli-hit even without the feature on, it only really adds cleaving to the small or weird things like knives or spears.
