The challenge with AP Spanish Lit is that there is a very extensive required reading list. It's literary analysis, so it's basically AP English Lit on steroids and in Spanish. If you have a burning desire to read Peninsular and Latin American Lit, be my guest. As a non-native speaker, think twice if you aren't in love with the literature.
